A super easy, super nummy recipe!
It’s a lunch favorite, but not bad for a light dinner.
(3 servings)

Ingredients:

  • 3 medium size zucchini
  • 2 pounds of ground meat (I used turkey)
  • 1 small onion (diced)
  • 1/2 bell pepper (diced)
  • olive oil
  • salt
  • pepper
  • garlic
  • Italian seasoning
  • green manzanillo olives
  • avocado slices

Instructions:

Cut zucchini in half, and place in a baking sheet. Drizzle with olive oil, salt, black pepper, garlic and oregano. Place in oven at 350
degrees for about 25-30 minutes.

In a pan, fry onions and bell peppers. Then add ground meet and season any way you like. Finally add green olives.

In a plate, place a few pieces of zucchini and add ground meat.

Top with avocado slices.
