I love creating memories with my girls and some of the best ones have been created in our kitchen making our favorite recipe, Banana Oatmeal Muffins!

These muffins are super easy to make and they are the perfect snack. Plus they are a healthier option for a birthday celebration; just decorate them with a little frosting and some sprinkles.

Ingredients:

  • 2 c. of oats or oat bran
  • 2 large ripe bananas
  • 2 large eggs
  • 1 c. plain Greek yogurt
  • ½ c. of sugar 3 tbsp. of chia
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. vanilla extract
  • ½ tsp. ground cinnamon
  • ⅛ tsp. salt

Optional: ½ cup mix-ins: chocolate chips, nuts, blueberries, etc.

Instructions:

  • Preheat oven to 400° F.
  • Lightly grease a muffin tin or line w/paper liners. We use our reusable silicone cupcake liners.
  • Blend all ingredients except mix-ins for 5 minutes or until well blended.
  • By hand add mix-ins if desired.
  • Fill tin or liners up to ¾.
  • Bake for 20 -25 minutes, always keeping an eye on them.
  • Insert a toothpick near the center and if it is free of batter the muffins are ready.
  • Take them out of the oven and let them cool before eating or decorating them.

Note: This recipe makes 20 mini muffins.
