At home we always say that breakfast in the most important meal of the day. Why? Because it gives us the necessary energy to start our day.

Therefore it is important to consume a good amount of protein and these pancakes, aside from being delicious, have 12 grams of protein.


  • 1 ripe banana
  • 1 egg
  • 1 tbsp. of chia
  • 1 oz. oat bran
  • ¼ tsp. ground cinnamon
  • ¼ tsp. vanilla extract


  • In a plate mash the banana.
  • Add the egg and mix well.
  • Add the chia, cinnamon and vanilla.
  • Finally mix in the oat bran.
  • Spread a little coconut oil or butter on to the frying pan.
  • When it is warm, add the mixture forming circles and cook for a few minutes on each side until golden brown

We like to eat them with fruit and a little drizzle of maple syrup, but you can add your favorite toppings.

This recipe will make 3 medium size pancakes, which is about a serving size, but you can multiple for as many people you like. I usually make a big batch of them to reheat the next day or munch on as a quick healthy snack.
