Tire of your old ham and cheese sandwich? Then try this easy quesadilla that will leave you wanting more! 

Ingredients:

  • Corn tortillas
  • Cheese (I use mozzarella or Monterey jack cheese)
  • Uncured ham
  • Corn kernel
  • Black bean hummus (the one I got was a bit spicy, you may also use regular hummus)

Instructions:

  • Heat a large skillet on medium heat.
  • Place a corn tortilla on pan.
  • Add cheese first, then corn and ham.
  • Spread black bean hummus on a tortilla and place on top.
  • Flip quesadilla and wait for a minute or two. Both sides should be slightly brown.
  • Salsa and guacamole go perfect with it.
